This honey-processed coffee starts its journey in Colombia’s Apia region, offering delicate floral notes of orange blossom and vibrant citrus. Hand-picked at peak ripeness and carefully sorted, the cherries undergo hydro-selection, where they’re immersed in water and partially pulped. After 72 hours in oxygen-restricted fermentation, the beans absorb sugars from the mucilage, resulting in a refined, aromatic flavour profile.
Tasting Notes: This complex cup carries notes of floral, honeysuckle, and mandarin throughout. A sticky body delivers flavors of cinnamon, honey, malt with a long sweet caramel finish.
